The Ritz-Carlton, San Francisco will open Bruma, a signature cocktail lounge and all-day salon, on October 12, 2026, inside the property's landmark 1909 Neoclassical building on Nob Hill. The 80-seat outlet — named for the Spanish word for "mist" — is designed to trade across multiple dayparts, shifting tone from afternoon aperitivo through late-night stirred classics, a programming strategy that gives the hotel a revenue-generating F&B asset beyond its existing breakfast concept, Parallel 37.
The Beverage Program
The cocktail menu is organized into four named passages: World's Edge (citrus-forward, arrival-themed), Open Water (Pacific-influenced, globally layered), Golden City (California seasonal fruit-driven), and High Ground (spirit-forward Martinis and stirred classics anchored to Nob Hill's identity). Signature tableside moments include a liquid-nitrogen Martini service and a reimagined Nob Hill Pisco Punch finished with pineapple brûlée. A curated back-bar of rare spirits runs alongside a full slate of spirit-free and low-ABV options — a build-out increasingly standard at luxury hotel bars competing for wellness-oriented guests and non-drinking companions. The beverage and food program was developed in partnership with Lowder-Tascarella Hospitality (LTH), a consultancy founded by Jeffrey Tascarella and Christopher Lowder with offices in New York and Bangkok.
Food and Design
The food menu reads as upscale lounge fare calibrated for sharing: Dungeness Crab Roll, Wagyu Smash Burger, California Poke Bowl, and Japanese Milk Bread with cultured seaweed butter. The through-line is Bay Area sourcing with coastal California technique — a positioning consistent with how premium hotel F&B outlets in gateway markets have pursued local credibility since the pandemic reshaped travel patterns. Interior design was executed by Fettle, the London- and Los Angeles-based hospitality design firm whose portfolio includes projects at The Georgian Santa Monica and the Hoxton Hotel Rome. The space features a custom room-length mural, a hand-etched églomisé back-bar mirror, and the hotel's original fireplace, which anchors the room as a residential parlor rather than a conventional hotel bar.
Programming and Outlook
Bruma's recurring programming calendar targets mid-week and weekend traffic with Golden Hour Aperitivo on Wednesdays and Thursdays (4–6 p.m.), live jazz on Fridays, and a Latin Fusion Band on Saturdays (both 7–10 p.m.). Annual signature events — including a Bruma Season and a Dungeness crab celebration — are designed to build repeat local patronage, a priority for urban luxury hotels that cannot rely solely on transient room demand to fill F&B seats. "From the first sip of afternoon tea to the last cocktail of the night, Bruma invites guests and locals alike to slow down and discover something new," said Nicholas McDermott, General Manager at The Ritz-Carlton, San Francisco. The 336-room property holds a AAA Five Diamond designation and ranked No. 1 city hotel in San Francisco in Travel + Leisure's 2025 World's Best Awards, a brand equity position the new outlet is expected to reinforce. For the broader luxury hotel F&B segment, Bruma's multi-daypart, neighborhood-facing model reflects a wider industry move away from hotel bars as afterthoughts and toward destination cocktail programming engineered to compete directly with independent venues.
